Pasta alla Gricia

How many of you know this ancient dish of Roman tradition? Slightly underestimated, of uncertain origin (it is thought to come from the shepherds in the area of Amatrice, a town on the border between Lazio and Abruzzo), Gricia can be considered to all intents and purposes the ancestor of His Majesty Pasta alla Amatriciana. The ingredients for a perfect pasta alla Gricia are few and simple: pasta, guanciale (not bacon!), pecorino cheese and pepper. Are you beginning to see the close relationship between Gricia, Carbonara and Amatriciana?
